After a year of aging...
These pictures are over a year in the making. The alcohol in the large, white oak barrel has been aging in there for a year! Here we have Forest Chadwick using a pump to move the alcohol into several glass carboys for further preperation.
In case you weren't familiar with the term "carboy," that is referring to the large glass bottles that Forest is putting the alcohol into. Using large glass containers for whiskeys, rums, and other fermented beverages dates back hundreds of years. The term "carboy" has been used for these bottles since at least the late 1700's.
